Summer is here!

And what better way to enjoy it than with a refreshing salad full of everything summer brings to the table. For those following a paleo, low-carb, gluten-free, or keto diet, salads with crunchy croutons are a thing of the past. Not anymore, though! We at Fox Hill Kitchens are excited to announce our new product: Awesome Croutonz!

Our Awesome Croutonz offer a super crunch with the perfect amount of garlic, olive oil, and salt. They’re a great addition to any salad, but also wonderful by themselves. Use them to satisfy that craving for a crunchy (low carb) snack. Our Croutonz are shelf-stable and don’t need to be refrigerated, so you can store them in your pantry or keep them handy in a purse or backpack for an easy on-the-go bite. Going for a hike this summer? Bring them along! They are the perfect, quick snack for the trail or campsite.

So, how will you be enjoying this exciting new product? How about going back to the basics with a classic Caesar salad? Check our our Paleo-friendly Caesar Salad dressing recipe below!

 

Caesar Salad

4-6 anchovy fillets (oil packed, drained), chopped
1 med/lg garlic clove, crushed
2 free-range egg yolks
2 Tbs fresh lemon juice
3/4 tsp dijon mustard
1/2 c plus 2 Tbs extra virgin olive oil
1/4 c finely fresh grated parmesan or Romano cheese (optional)
1/2 tsp Worcestershire sauce or coconut aminos (optional)
1/8 tsp fresh ground pepper (or to taste)
sea salt, to taste

Put anchovy, garlic, yolks, pepper, lemon juice, dijon, and Worcestershire sauce/coconut aminos into food processor. Pulse to combine. With machine running, pour in extra virgin olive oil slowly until thickened. Add salt and pepper to taste. Add cheese (if using). Pulse to mix.

Toss dressing with romaine lettuce or greens of your choice, and top with Awesome Croutonz!
