Low carb, Keto and Paleo Mayonnaise
Mayo is a great way to take your juicy burgers and favorite sandwiches to the next level. However, sometimes it may be hard to find mayo that fits your dietary needs. This mayo recipe is quick, easy, doesn’t use soy or canola oil, and delicious!
1 large egg, room temperature
1 tablespoon lemon juice
½ teaspoon ground mustard (or 1 teaspoon prepared dijon mustard)
½ teaspoon sea salt
¾ cup avocado oil
A stick blender is recommended for this, though a small blender or Cuisinart will work as well.
Place all ingredients in a narrow, straight-edged container (or in blender). Turn on stick blender, and blend until all ingredients are mixed.
Want more flavor? That can be achieved very quickly by just adding your favorite spice mix or minced garlic to the mayo!
Tips:
If you have extra large eggs, you may need to increase the oil by a small amount for the mayonnaise to come out thick enough.
If mayonnaise is very thick and there’s a small amount of oil that doesn’t look fully incorporated in the top, add a 1/4 – 1/2 teaspoon of water and mix again.
