The Best Low Carb Grilled Reuben Recipe

A Reuben is traditionally a sandwich made with corned beef, swiss cheese, sauerkraut, and a Russian dressing in between rye bread grilled to perfection. This low carb grilled Reuben has two twists to it, as we use our Large Bunz instead of rye bread to keep it gluten free and of course low carb and make our own incredible dressing!

Make Your Own Dressing for Your Low Carb Grilled Reuben

Russian dressing is creamy, slightly spicy, and an absolute staple a Reuben. To make this dressing combine the following ingredients in a bowl:
 
 
  • 1/2 cup mayonnaise (homemade mayo or Primal Kitchens Mayo recommended)
  • 2 Tbsp. tomato paste or sugar-free ketchup
  • 1 tsp. Worcestershire sauce
  • 1 tsp. horseradish
  • freshly cracked pepper
  • pinch of cayenne pepper

 

Mix well and you’re done!

Remember to Flip Your Bunz!

It is super important to flip the sliced bun inside-out to ensure even heat distribution. The top of the bun will be on the inside, and the inside of the bun is in contact with the grill, cook top, or pan.

Low Carb Grilled Reuben

Materials

  • 1/2 cup mayonnaise (homemade mayo or Primal Kitchens Mayo recommended)
  • 2 tbsp  tomato paste or sugar free ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp horseradish
  • 1 pinch freshly cracked pepper
  • 1 pinch cayenne pepper
  • 4 Fox Hill Kitchens Large Bunz
  • 1 lbs  thinly sliced corned beef
  • 1/2 lbs thinly sliced Swiss cheese
  • 2 cups  sauerkraut, well drained (homemade or unpasteurized recommended)

Instructions

For the Russian Dressing

  • Combine all ingredients, and refrigerate any unused dressing.
  • Measure out 1/2 cup and set aside for later

For the Reuben

  • Slice Large Bunz, and spread Russusian dressing on the outer layer of the Bunz (bun should be inside-out)
  • Layer corned beef, cheese, and sauerkraut.
  • In a large skillet, melt butter on VERY LOW HEAT.
  • Pan grill sandwiches until nicely browned.  Use a bacon press to weigh it down.
  • Enjoy!

Notes

Works best when ingredients are near room temperature.
