Low carb, Keto and Paleo Mayonnaise

Equipment

  • 1 stick blender (or slternative small blender or Cuisinart will work as well)

Materials

  • 1 large egg
  • 1 tbsp. lemon juice
  • ½ tsp ground mustard (or 1 teaspoon prepared dijon mustard)
  • ½ tsp sea salt
  • ¾ cup avocado oil

Instructions

  • Place all ingredients in a narrow, straight-edged container (or in blender).
  • Turn on stick blender, and blend until all ingredients are mixed.
  • Add to your favorite dishes!

Notes

If you have extra large eggs, you may need to increase the oil by a small amount for the mayonnaise to come out thick enough.
If mayonnaise is very thick and there’s a small amount of oil that doesn’t look fully incorporated in the top, add a 1/4 – 1/2 teaspoon of water and mix again.
