Gluten Free & Low Carb Eggnog French Toast

Use our Fox Hill Kitchens Awesome Bunz to make a healthy breakfast with classic holiday flavors! This French toast is soft on the inside, crisp on the outside, and free of gluten and sugar.

Materials

  • 1 Bag Large Fox Hill Kitchens Bunz Small Bunz would work as well but the French toast won't be as soft and fluffy.
  • 4 eggs
  • ½ Cup Cream + 3 Tbs water
  • 3-4 Tbs Allulose
  • ¼ tsp salt
  • Tbs Dark Rum
  • 1 tsp Vanilla
  • ½-¾ tsp Ground Nutmeg
  • Butter for cooking

Instructions

  • Slice thawed Bunz at a slight angle, top to bottom (we made approx. 5 1-inch-thick strips from each Large Bunz).
  • In a medium bowl, combine all the batter ingredients and whisk until well blended.
  • Put the sliced Bunz into a medium dish so that they are in a couple layers and pour the batter over the Bunz.
  • Let the Bunz absorb the batter for a few minutes while flipping the pieces around in the dish, so they are evenly coated.
  • Heat skillet over medium heat.
  • Add a generous amount of butter to the preheated skillet and add French toast. Cook until golden brown on each side and remove from the pan once the center of the pieces just start to puff up.
  • Cook French toast in batches, adding more butter as necessary (they soak up a lot of butter!).
  • French toast can be served fresh or kept in the refrigerator for up to 4 days.
