Healthy Caesar Salad (with Dressing Recipe)

For those following a paleo, low-carb, gluten-free, or keto diet, simple salads, like a lovely Caesar are a thing of the past. Not anymore, though! This healthy Caesar salad recipe is easy, keto-friendly, and includes our own gluten-free croutons.

Measure Your Ingredients for the Caesar Dressing

For your Caesar Dressing measure out all your necessary and optional ingredients 

  • 4-6 anchovy fillets (oil packed, drained), chopped
  • 1 med/lg garlic clove, crushed
  • 2 free-range egg yolks
  • 2 Tbs fresh lemon juice
  • 3/4 tsp Dijon mustard
  • 1/2 c plus 2 Tbs extra virgin olive oil
 

Optional Caesar Dressing Ingredients 

  • 1/4 c finely fresh grated parmesan or Romano cheese (optional)
  • 1/2 tsp Worcestershire sauce or coconut aminos (optional)
  • 1/8 tsp fresh ground pepper (or to taste)
  • sea salt, to taste

Mix All Dressing Ingredients Together

Put anchovy, garlic, yolks, pepper, lemon juice, dijon, and Worcestershire sauce / coconut aminos into the food processor. 

Pulse to combine. 

With the machine running, pour in extra virgin olive oil slowly until thickened. Add salt and pepper to taste.

Add cheese (if using).

Pulse to mix.

Croutonz on healthy Caesar salad

Toss & Top to Complete your Healthy Caesar Salad

Toss the dressing with romaine lettuce or greens of your choice.

Top with our awesome original Croutonz or for more flavor our Cheesy Italian Croutonz.

Your healthy Caesar salad with Caesar dressing made from scratch is ready!

Materials

Caesar Dressing

Salad

  • 3 hearts  fresh romaine lettuce (or greens of your choice)
  • 1/4 cup Fox Hill Kitchens Croutonz

Instructions

  • Pulse anchovies, garlic, yolks, pepper, lemon juice, dijon, and optional ingredents in a food processor. 
  • With machine running, pour in extra virgin olive oil slowly until thickened.
  • Add salt and pepper to taste. 
  • Add cheese (if using). 
  • Pulse to mix.
  • Toss dressing with romaine lettuce or greens of your choice
  • top with our awesome Croutonz!
